Scrub potatoes well. Slice each potato in half lengthwise, then cut each half into 3 wedges.
In a bowl combine butter, oil, garlic, lemon juice, lemon pepper, and salt. Toss potato wedges
in the lemon mixture then place on a greased shallow rimmed baking pan. Pour any
remaining mixture over the potatoes. Cook on convection at 400F for 20 minutes. Turn over
potatoes and continue cooking 10 to 20 minutes more, until golden brown and tender.
