2 cups thin vertically sliced red onion (1 medium)
1 red bell pepper, seeded and quartered
2 tbsp balsamic vinegar
1/4 tea salt
1/4 tea freshly ground black pepper
1 (4 oz) package goat cheese, softened
2 tbsp commerical frfigerated pesto
1 (8 oz) thin French bread baguette, quartered crosswise
Instructions
1. Preheat panini grill.
2. Coat grill with cooking spray. Place mushrooms, onion, and bell pepper on grill. Brush vegetables evenly with vinegar, coat with cooking spray, and sprinkle evenly with salt and pepper. Grill 6 minutes until vegetables are tender. Remove from grill, and cut mushrooms and bell pepper into strips.
3. While vegetables grill, combine goat cheese and pesto. Cut bread quarters in half horizontally. Spread goat cheese mixture on cut sides of bread.
4. Place vegetables evenly on bottom halves of bread. Cover with top halves. Place sandwiches on panini grill; coat with cooking spray. Grill 3 minutes or until golden brown.
