     Baked Eggplant and Rice Casserole

Ingredients
1.5 cup long grain white rice, prepared
3 cups eggplant, cubed
0.5 cup onion, sliced
0.5 tbsp each basil, oregano, and dried parsley
2 tsp garlic
5 tsp margarine
 

Instructions
Lightly grease casserole dish. Preheat oven to 400 degrees.
Combine eggplant, onions, rice, and seasonings.
Top with 5 tsp of butter, arranged along the top.
Bake for 30 minutes, or until eggplant is soft.
