heat 1 T olive oil in sauce pan. saute garlic for a couple minutes until soft. remove from heat and add tomatoes, basil, and balsalmic vinegar. add salt and pepper to taste. set aside.
salt and pepper (or use slap ya mama seasoning) chicken breasts and cook on grill or grill pan. when nearly done, top with slices of mozzarella and turn off heat.
meanwhile, cook pasta per directions and save 1 cup pasta water. drain pasta, toss with 1/4 cup olive oil, butter, and zest and juice of 2 lemons. add some salt and lots of freshly ground black pepper.
add a little pasta water if pasta seems dry.
to serve, put pasta in bowl. top with chicken breast and spoon some tomato mixture on top.
