     Grandma Ridgeway's Black Walnut Cake

Ingredients
Begin with ingredients at room temperature
1/2 pound butter
3 cups sugar
8 eggs
1 Tablespoon vanilla
2 Tablespoons lemon flavoring
5 cups flour
5 teaspoons baking powder
1/4 teaspoon salt
 
1 cup milk
1 cup floured black walnuts

Instructions
Cream together butter, sugar, beaten eggs, vanilla, and lemon. Sift together flour, baking powder, and salt. Add flour mixture, alternately with milk, beginning and ending with flour mixture. Fold in floured black walnuts. Batter will be thick. Bake in a greased and floured tube pan at 350 degrees for 1 to 1 1/2 hours. Avoid opening oven for first hour. Top should spring back and cake tester should come out clean. Top usually cracks.
This recipe can also be used for chocolate chip or raisin muffins. Just eliminate the black walnuts and add chocolate chips or raisins in their place. You can also eliminate the lemon flavoring, if desired. Bake muffins about 20 to 30 minutes -- until top springs back.
