     Creamy vegetable soup

Ingredients
2 T butter
1 onion, chopped
2 T ginger, minced
4 c carrot (or mushroom, brocili, etc.)
1 potato, chopped
2 cans chicken broth (or 4 c water plus 2 bouillon cubes)
1/2 c cream
salt
pepper
 

Instructions
Melt butter and saute onions until tender. Add minced ginger and saute 2-3 min.
Add chopped carrots and potato and chicken broth. Bring to a boil. Lower and simmer until vegetables are soft.
Once vegetables are soft, turn off the heat and let soup cool 10 min. Blend in blender/food processor.
Put on low fire and add in cream, salt and pepper to taste.
Serving Suggestions
serve with fresh baguette
