In a large bowl, combine the first 10 ingredients. Crumble feef over mixture and mix well with a fork. On a large piece of aluminum foil, pat beef mixture into a 14 X 10 regctangle. Spread with sour cream to within 1/2 inch of edges. Sprinkle with cheese and olives.
Roll up, jelly roll style, starting with short side and peeling away foil while rolling. Seal seam side down and seal edges. Place in greased 13X9 baking dish. Bake uncovered at 350 degrees for 65-75 minutes or until a meat thermometer reads 160 degrees. Let stand 15 minutes before serving.
