1 lb lean ground beef or pork
1 tbsp light soy sauce
2 tsp minced fresh ginger
1 tsp minced garlic
1 cup raw converted white rice, freshly cooked w/o salt
16 large outer leaves Boston Lettuce (from 2 heads)
1 cup shredded carrots
1 cup shredded cilantro
1 cup sliced scallions
1 cup sliced radishes
8 bamboo skewers
1/3 cup light soy sauce
1/3 cup water
3 tbsp fresh lemon juice
1 tbsp minced fresh ginger
2 tsp minced garlic
1 tsp sugar

Mix meat ingredients until well blended. Roll into 16 balls, then shape into ovals. Cover and refrigerate while preparing other ingredients.
Arrange rice, lettuce, carrots, cilantro, scallions and radishes on a serving platter.
DIPPING SAUCE- Mix ingredients and divide among 4 small bowls.
Heat grill or broiler. Thread 2 patties lengthwise on each skewer. Grill or broil 10 to 12 minutes, turning to brown all sides, until cooked through and a meat thermometer inserted in center registers 160F. Add skewers to platter. To eat, open lettuce leaf, spoon on a little rice, then some of the carrots, cilantro, scallions, radishes and a hot meat patty. Wrap leaf around filling; dip lettuce roll in sauce.
