     White Macadamia Nut Fruitcake

Ingredients
2 - 7oz jars whole macadamia nuts
16 oz candied pineapple, cut
16 oz maraschino cherries, drained
4 cups flour, divided
1 1/2 cup butter softened
2 cups sugar
6 eggs separated
3/4 cup orange juice
1 tsp grated orange rind
 
2 tbsp finely chopped candied ginger
1 tsp cream of tartar

Instructions
275F. Butter pans. Combine nuts, pineapple, cherries with 1/2 cup flour. Cream butter, sugar. Beat egg yolks. Add to butter. Add orange juice. Add ginger with egg whites and tartar till stiff and glossy. Fold into butter. Add remainder of flour and mix well. Fold in nut mixture. Bake 1 1/2 hours to 2 hours.
