     TWICE BAKED POTATOES (FOR FOUR)

Ingredients
4 baking potatoes
3 green onions, thinly sliced
2 tbsp butter or margarine
1/2 c milk -hot
1/2 tsp salt
Dash pepper & paprika
4 slices bacon
2 tbsp grated Parmesan cheese
2 tbsp grated sharp cheddar cheese
 

Instructions
Wash potatoes & pat dry; prick potatoes several times. Bake potatoes on rack at 400 for 1 hour or until they are done. Cut a thin slice from top of potatoes, scoop out pulp into bowl, mash the pulp with hot milk till fluffy, add in butter & green onions. Add seasonings & crumble fried bacon into mixture. Spoon mixture back into potatoes & sprinkle with both cheeses. Bake at 375 on baking sheet until cheese is melted, about 15 minutes. My friend Deb & I used to go to Ruby Tuesday's & get potato skins & found this & it is real close.
