     -SLOW-COOKED- CHUNKY BEEF STEW

Ingredients
2 lbs top round steak, cut into 1inch pieces
5 small round red potatoes, quartered
1 large onion, chopped about 2 c
4 large carrots, scraped & cut into 3/4inch pieces
8 stalks celery, cut into 3/4inch pieces
1 7 oz can sliced mushrooms, drained
1/4 c - 1 tbsp quick cooking tapioca -uncooked-
1/2 tsp salt
1/2 tsp pepper
 
1 tsp sugar
3 c tomato juice
1 8 oz pkg frozen English peas

Instructions
Preheat oven to 250. Combine first 10 ingredients in a large roaster or Dutch oven. Stir well. Pour tomato juice over mixture. Cover & bake for 5 hours. Stir in peas & return to oven for 10 more minutes. This makes a great Sunday dinner. Fix before you go to church & when you get home make corn muffins & a salad & you have dinner.
