     Baingan Bharta

Ingredients
2 medium sized Aubergines
3 onions (chopped)
3 large green chillies (finely chopped)
2 large tomatoes (chopped)
1/2 teaspoon each cumin and mustard seeds
1 teaspoon turmeric powder
Ghee to fry
Salt to taste
 

Instructions
1. Grill the aubergines directly on a flame or through a flat pan. When grilled, peel off the charred skin and mash the grilled aubergine. 2. Add ghee in a saucepan and fry the cumin and mustard seeds till they splutter.
3. Add the chopped onions and fry till brown. 4. Add the chopped tomatoes. Cook till soft.
5. Add the mashed aubergine and mix well. 6. Add the turmeric powder and chopped green chillies and mix well.
7. Add salt to taste, mix well and serve hot.
Serving Suggestions
Parathas or rice
