     ITALIAN MONTERAY JACK CHICKEN

Ingredients
2 1bs ground beef
1 large onion, finely chopped
1 egg
1 can diced tomatoes, drained
1 1/2 - 2 c cracker crumbs or breadcrumbs
salt, pepper & garlic, to taste
1 c tomato paste & 1 tsp water
 

Instructions
Preheat oven to 350. Mix all ingredients -except tomato paste & water-. Mix well & place in a casserole dish evenly. Mix half of the tomato paste & water & spread on top. Bake for 1 hour. Sometimes I have to leave out the onions for the picky people & when I do not have tomato paste I use ketchup. It is just a good ole family favorite that everyone loves.
