7 minute icing
Combine ingredients except the vanilla in double boiler, cook for 7 minutes until the mixture holds peak. Remove, add vanilla. Beat lightly, spread on cake. Cover with coconut. This is Delores' ( Lori) favorite, she always wants it for her birthday cake (I prefer white or yellow cake - Lori). It was also Grandpa Bowling's favorite. Mom always made it for him at the family dinners.
