     Mike's Fantastic Corn Casserole

Ingredients
1 stick butter
2 (8.5 oz) boxes Jiffy corn muffin mix
1/3 C sugar
2 eggs (well beaten)
2/3 C milk
8 oz sour cream
1 can creamed corn
1 can corn, partially drained
 

Instructions
Preheat oven 350 degrees Place stick butter in 9X9 baking pan (stoneware works great but not necessary) and let it melt as oven preheats. Mix dry ingredients and separately mix wet ingredients, then mix together. Pour melted butter into mixture, mix well, then pour entire mixture back into buttered baking dish. Bake about 45 min; check for firm center. But will continue to cook after removed from oven AND is great to reheat as a leftover. Consistency should be very moist but firm.
Serving Suggestions
Great side dish with any entree and/or as your bread (but it's not a finger food)
