1 medium eggplant, cut5 into 1/2 inch thick slices, halved
3/4 cup olive oil
1/2 cup balsamic vinegar
2 tsp thyme leaves
2 tsp rosemary leaves
2 tsp basil leaves
1 tsp pepper medley
1 tsp salt
Instructions
1. Place asparagus, mushrooms, bell peppers and eggplant in large rimmed baking pan. Add olive oil, vinegar, and all of the remainder of the seasonings, tossing to coat well.
Roast in preheated 450 degree oven 15 minutes or until edges are browned and vegetables are tender.
Variation-
Italian roasted mixed vegetables
Substitute 4 teaspoons Italian Seasoning for thyme, rosemary and basil leaves.
