1. Combine tomatoes, minced onion, Italian seasoning, and garlic powder. Stir in eggs, half and half, cheese, salt and pepper. Pour mixture into pie shell.
2. Bake in preheated 375 degree oven 45 to 50 minutes or until top is golden and quiche is set in the center. Remove from oven and let rest for 5 minutes before cutting into wedges and serving.
VARIATIONS
Tomato Quiche with Basil and thyme
Substitute 1 tsp basil and 1 tsp thyme for the italian seasoning. Prepare as directed.
All Season Tomato Quiche
Use 2 cups well-drained canned diced tomatoes in place of the fresh tomatoes. Prepare as directed.
