     Eggless Banana Refridgerator Cookies

Ingredients
1 cup Butter
2 cups Sugar
1 tsp Vanilla
1 cup Mashed Bananas, fully ripe
3-1/2 cups Flour
2 tsp Baking Powder
1/2 tsp Salt
Waxed Paper
 

Instructions
Cream together butter, sugar, vanilla, and bananas. Sift together flour, baking powder, and salt. mix together in small amounts, dough will be sticky.
Divide dough into 4 parts, put each part on its own sheet of waxed paper. With damp hands shape dough into a long 1-inch round roll. Wrap dough tightly in waxed paper and refrigerate until firm enough to slice. With a serated knife, cut into 1/2-inch thick slices. Place 2-inches apart on lightly oiled cookie sheets as they will spread. Bake at 375F for about 10 minutes or until edges begin to brown. Lift the edge of a cookie to be sure it is not getting to brown on the bottom. Remove cookies to wire racks to cool. Store in an airtight container
