     LightVegetable Stock

Ingredients
7 cups Water
1 large Onion, chopped
1 large Carrot, sliced
2 large Celery stalks, sliced
1 medium Potato, scrubbed and diced
1 cup coarsly shredded White Cabbage
Salt to taste
2 tsp Italian Herb Mix
 

Instructions
Place all ingredients in a large soup pot. Bring to a low boil, then simmer gently, covered, over low heat for 40-45 minutes or until vegetables are quite tender. Strain stock through 3 layers of cheese cloth.
