     Pork Stuffed Mushrooms

Ingredients
3/4 lbs unseasoned ground pork
1/4 cup red onion, chopped
1/4 cup green pepper, chopped
12-14 medium mushrooms, or 6-8 large, stemmed
2 tsp cooking sherry
2 tbsp worchestershire sauce
1 tbsp black pepper
1 tbsp coarse sea salt
2 tsp garlic powder
 
1 tsp oregeno
1 tsp basil
extra virgin olive oil

Instructions
lightly coat medium skillet with olive oil, cook onions and peppers, over medium heat, for 3 minutes. Add 2 tbsp sherry, 1/2 tbsp ea. black pepper, salt and 1 tsp basil. Cook until fork tender, set aside, still in pan, 5 minutes.
In large mixing bowl, combine worchestershire, pork, basil, garlic, salt, pepper. mix well. Add peppers/onions with cooking juices. mix well. Mixture should be well mixed, but still seem slightly loose. preheat oven to 400.
After stemming and washing mushrooms, tightly stuff mixture into cavity of mushroom. Stuffing should protude considerably--mushroom/meat should form something that almost looks like a ball. Bake for 10-15 minutes, or until meat is cooked.
Serving Suggestions
Serve as appetizer, or as entree with steamed vegitables or rice.
