     Strawberry Spinach Salad

Ingredients
Baby spinach - 6oz. package
Small red onion - 1/4 cup (sliced into thin wedges)
Cucumber - 1/2 medium (sliced and cut in half)
Strawberries - 1 1/2 cups (hulled and quartered)
Almonds - 1/4 cup
Lemon - 1
 
White wine vinegar - 2 tbsp.
Sugar - 1/3 cup
Vegetable oil - 1 tbsp.
Poppy seeds - 1 tsp.

Instructions
Dressing - zest lemon using Lemon Zester/scorer to measure 1/2 teaspoon zest. Juice lemon using Juicer to measure 2 tablespoons juice. Combine zest, juice, vinegar, sugar, oil, and poppy seeds in small batter bowl. Whisk until well blended using mini-whipper. Cover; refrigerate until ready to use.
Preheat oven to 350.
Salad - Hull strawberries and cut into quarters. Score cucumber lengthwise using lemon zester/scorer, remove seeds. Slice cucumber, cut slices in half/slice into thin wedges.
Place spinach in large serving bowl; add strawberries, cucumber and onion. Sprinkle with almonds.
Serving Suggestions
Whisk dressing; pour over salad and serve immediately. Enjoy!
