     Poppy Compound Butter

Ingredients
1/2 LB of Butter (2 sticks)
3 sprigs of rosemary, stripped from stems and chopped
4t of poppy seeds
1 lemons zest
1/2 clove of garlic, chopped
1.5 t of salt - Depending on you saltiness liking, you can add less if you’d like
 

Instructions
Start by chunking your butter and bringing it to a temperature pliable enough to mix. I added my salt and poppy seeds to my molcajete (mortar and pestle) LOL. I ground them together to make a course meal. Next, I added my chopped rosemary and lemon zest to the mortar. Grounded them with the meal for a bit to bring out the flavor some.
Add the mixture to the butter. Before mixing, I added the chopped garlic. I didn’t grind the garlic because it’d bring out the garlic more. I didn’t really want it to be apparent. Just a little sumthin’ sumthin'. and mix....until everything is evenly spread amongst the butter
Finally, scoop the butter onto some parchment paper to shape it. Shaping is simple. Spread the butter so that you can bring the parchment paper over the butter. Now you can get a grasp and shape into a log. Chill until set.
