Mix apples, oil and sugar. Let stand for one hour, stirring a few times. In a separate container, beat eggs slightly. Mix apple mixture with flour, cinnamon and salt. Dissolve baking soda in 1 tablespoon boiling water and add to mixture. Add nuts and vanilla. Pour into greased and floured 9 x 13 pan.
Bake at 350 degrees for 30-45 minutes. Larger pans will take less cooking time, test with toothpick for doneness. When cool sprinkle with powdered sugar. Cut into squares. (Leftover pieces freeze well in plastic containers.)
