     Sumac and Lemon Roasted Zucchini

Ingredients
4 medium zucchini, trimmed, halved lengthways, thickly sliced
1 large red onion, cut into wedges
1 medium lemon, juiced
1 teaspoon sumac
1 tablespoon olive oil
1/3 cup fresh coriander leaves
 

Instructions
Preheat oven to 200°C/180°C fan-forced. Place zucchini, onion, lemon juice and sumac in large roasting pan. Drizzle with oil. Toss to coat.
Roast for 40 minutes or until zucchini is tender. Season with salt and pepper. Serve topped with coriander.
Serving Suggestions
Serve with grilled lamb chops, lamb or chicken tagine or pan-fried fish fillets.
