Put chicken and spices in pot and cover with water and cook for about 3 hours. You can also put all of this in a crock pot.
Debone chicken and slice sausage and put back in the pot.
Saute vegetables in the oil til soft then add the butter and flour. Then add all to the Chicken. Let simmer for about an hour. If you want, thicken the sauce with a flour/water mixture.
In the meantime cook rice. For this recipe I made 7 cups of rice.
