     Rice Kheer (Kosher/vegan)

Ingredients
1 cup Basmati rice (soaked and boiled)
1/2 litre soya milk
3-4 tablespoons sugar
5 pieces cardamom (cleaned and crushed)
Few strands saffron (soaked in soya milk)
broken almond pieces
 

Instructions
Boil the soya milk along with sugar.
Add the rice and boil down the milk to the required consistency.
Add the crushed cardamoms and broken almonds and boil for 5 minutes. Add the saffron milk and reduce heat. Cook for 2 minutes.
Serve hot or cooled in the fridge.
Serving Suggestions
A vegan/kosher alternative to using milk for this preparation. Coconut milk could also be used instead of soya milk.
