     Espinaca Dip

Ingredients
10 oz package frozen, chopped spinach-thawed
10 oz can chopped tomatoes & chiles, drained
8 oz cream cheese, softened & cut into cubes
1 cup sliced, black olives
2 cups grated monterey jack cheese
1 tbsp red wine vinegar
2 tbsp cornstarch
1 cup half & half
 

Instructions
Combine spinach, tomatoes & chiles, cream cheese, olives, cheese, & vinegar in bowl. In separate bowl, mix cornstarch with half & half until blended thoroughly.
Combine the two mixtures until well blended. Pour into a greased, shallow baking dish. Bake at 400 degrees for 30 minutes. Serve hot with chips.
