     Brussels Sprouts and Cheese Bake

Ingredients
20 ounces fresh Brussels sprouts or frozen Brussels sprouts thawed and drained
2 cups low- fat cottage cheese
1 cup low- fat plain yogurt
1/2 cup scallions, sliced
2 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon salt (optional)
1/4 teaspoon pepper
1 cup seasoned Italian bread crumbs
 
2 ounces part-skim mozzarella cheese, grated

Instructions
Preheat oven 30 300 degrees. Cook Brussels sprouts over medium heat in a saucepan or steamer witha small amount of water until almost tender; drain. Combine Brussels sprouts, cottage cheese, yogurt, scallions, garlic, paprika, salt and pepper in a large bowl; mix well. Lightly oil a casserole.
Spoon the Brussels sprouts mixture into the prepared carrerole. Sprinkle bread crumbs and mozzarella over the top. Bake for 45 minutes.
Ten minutes for preparation. Relax while it bakes for 45 minutes. About 221 calories per serving.
