     Sunrise Biscuits

Ingredients
2 cups flour
1 Tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup unsalted butter or margarine, cut into pieces
1 cup buttermilk
1 egg white, lightly beaten
1 Tablespoon water
 

Instructions
Preheat oven to 450 degrees. Spray a nonstick baking sheet with vegetable cooking spray. Set aside. In a large bowl, sift together flour, baking powder, baking soda, and salt. Using a pastry blender or 2 knives, cut in butter until coarse crumbs form. Stir in buttermilk until a soft dough forms. On a lightly floured surface, roll out dough to a 1/4 inch thickness. Using a 2 1/2 inch biscuit cutter, cut out biscuits. Re-roll trimmings; cut out more biscuits. Place on prepared baking sheet. To prepare glaze, combine egg white and water. Brush glaze over tops of biscuits. Bake until golden, about 12 to 15 minutes. Transfer biscuits to a wire rack to cool slightly. Serve warm.
