     Carolyn's Lemon Chess Pie

Ingredients
1 cup sugar
4 tablespoons butter
4 eggs separated
Grated rind and juice of 1 large or 2 small lemons
8-inch pie shell , prebaked 7-8 minutes
 

Instructions
Cream sugar with butter until light. Beat in the egg yolks, one at a time. Add lemon juice and rind. Beat egg whites until stiff. Fold in lightly. Pour lemon filling into warm shell and bake at 350 degrees for 35 to 30 minutes or until filling is set and light golden brown in color.
