     Spinach Soup Provolone

Ingredients
1- 10 oz package frozen, chopped spinach
1/4 cup finely chopped onion
1/4 cup butter
4 tbsp flour
4 cups milk
1 1/2 tsp salt or to taste
1/2 - 3/4 cup grated provolone cheese
crumbled bacon
 

Instructions
Thaw spinach but do not drain. Puree spinach in a food processor. Saute onion in butter. Add flour, stirring constantly for 2 minutes, and then add milk to make a thin white sauce.
Add pureed spinach and salt. Heat thoroughly.
Serve topped with a generous sprinkling of grated cheese and crumbled bacon.

Makes 6 small servings
