Ingredients
Baking Potatoes
1 tbsp grated cheddar cheese for each potatoe
2 tsp chopped cooked bacon for each potatoe
OR
1 tbsp grated monterey jack cheese for each potatoe
2 tsp jalapeno relish for each potatoe
2-3 slices of banana peppers for each potatoe
GARNISH-
 
Sour cream for each potatoe

Instructions
350F. Wash and dry each potatoe. Pierce with a fork and place in oven. Bake for 30 minutes or until centre is firm but can be easily pierced. Cool the potato, cut in quarters lengthwise and cut out the centre leaving the skin with 1/4 inch to 1/2 inch potato on it.
Brush the skins with butter, sprinkle them with salt and pepper and arrange them on a buttered cookie sheet. Bake for 10 minutes. Top them with either topping and bake for another 10 to 15 minutes or until cheese is melted and they are crispy. Serve at once.
