     FRENCH VANILLA ICE CREAM

Ingredients
3 c milk
5 beaten egg yolks
3/4 c sugar
2 1/4 tsp Vanilla
1/8 tsp salt
1 1/2 c Half & Half
 

Instructions
Thoroughly combine milk, egg yolks, salt & sugar. Cook slowly in double boiler until mixture thickens to the consistency of thin pancake batter & coats the spoon, approximately 30 minutes, don't scorch it. Cool to room temperature. Add vanilla & half & half. Chill in refrigerator for 2 hours. Churn freezer according to directions. For 4 quarts, double ingredients, except use 9 egg yolks. Jean always wants this when she is here. I started a tradition, making it while we went to the Orange Bowl Parade. Good with fresh strawberries.
