     Cod BLT wraps

Ingredients
4 pieces of southern style cod or cod fillets
1/2 cup halved grape tomatoes
2 tbsp light mayonnaise
1/4 tsp grated lemon zest
1 1/2 tsp lemon juice
1/4 tsp paprika
2 leaves green leaf lettuce
4 slices bacon, cooked
2 large whole wheat flour tortillas
 
pinch of salt and pepper

Instructions
1. Bake cod in 450°F (230°C) oven, turning once for 20 minutes or until fish flakes easily. Let stand for 2 minutes.
2. While fish bakes, in a small bowl whisk together mayonnaise, lemon zest, lemon juice, paprika, salt & pepper and set aside.
3. Divide lettuce, bacon, cod and tomatoes; drizzle with mayonnaise mixture. Roll up and cut in half.
