4 pieces of southern style cod or cod fillets
|
|
1/2 cup halved grape tomatoes
|
|
2 tbsp light mayonnaise
|
|
1/4 tsp grated lemon zest
|
|
1 1/2 tsp lemon juice
|
|
1/4 tsp paprika
|
|
2 leaves green leaf lettuce
|
|
4 slices bacon, cooked
|
|
2 large whole wheat flour tortillas
|

Instructions |
|
|
1. Bake cod in 450°F (230°C) oven, turning once for 20 minutes or
until fish flakes easily. Let stand for 2 minutes.

2. While fish bakes, in a small bowl whisk together mayonnaise,
lemon zest, lemon juice, paprika, salt & pepper and set aside.
|
|
|
3. Divide lettuce, bacon, cod and tomatoes; drizzle with
mayonnaise mixture. Roll up and cut in half.
