     Mom's Angel Pineapple Pie

Ingredients
1 baked pie shell
1 cup sugar
5 tablespoons cornstarch
1 1/2 cup crushed pineapple, drained
1 egg, beaten
Pineapple juice and water to make 1 1/2 cups
1 1/2 cups whipping cream
 

Instructions
Combine sugar and oarnstarch. Add to juice. Bring to boil in medium saucepan. Stir constantly until thick. Add a little of the hot mixture to the beaten egg, then add to hot mixture. Cook until thick. Cool completely. Add pineapple and whipped cream. Pour into pie shell and refrigerate.
