Preheat oven to 350.
In a food processor add the mashed bananas, flour baking
powder, baking soda, pineapple and juice. 1 cup of the coconut,
orange zest and salt.
Pour batter into paper lined muffin tin and sprinkle top with 1/8
cup coconut (optional). Bake 25 minutes. Move to cooling rack.
Arrange sliced bananas and remaining 1/8 cup coconut over top
for decoration, (optional). PLEASE NOTE- If storing muffins DO
NOT add banana slices and coconut.
