     Banana Crunch Muffins

Ingredients
2 Tbl Vegetable Oil
2 Tbl Brown Sugar
2 Tbl Honey
2 Tbl Flax Meal
2 Tbl Water
1 Ripe Banana, sliced
1 tsp Vanilla
1/2 Cup White or Brown Rice Flour or Sorghum Flour
2 Tbl Tapioca Flour
 
1 tsp Cinnamon
1 1/3 Cups Allergy-safe Granola or Cereal
1 Cup Allergy-safe Trail Mix, any flavor

Instructions
Preheat oven to 350. In a mixer cream together the first 7 ingredients. Mix in flours and cinnamon until smooth. If desired, place granola in a plastic bag and gently crush with a rolling pin. Stir granola and trail mix into batter. Spoon batter into greased or paper lined muffin pan and bake 20 to 30 minutes. Can put into regular or mini muffins, but watch to make sure they don't get over done.
