1. Preheat oven to 350 degrees. Pulsing the graham crackers in a food processor till they become crumbs. Add melted butter to the food processor and pulse till butter combines. Press the crumbs into the bottom of your muffin cups.
2. Next melt your marshmallows in a saucepan over medium heat. Continuously stir the marshmallows so they do not burn on the bottom. Once they are completely melted remove from heat.
3. In an electric mixer beat the cream cheese till smooth. Add in the egg, mix till combined. Add the melted marshmallow. Beat on medium speed for 5 minutes. Mixture will become light and smooth. Fill muffin cups about 3/4 full with the cream cheese mixture. Bake in a 350 degree oven for 15 minutes.
4. Remove from oven and finish by placing a chocolate chip in the center of each heart.
Can be refrigerated for up to 4 days.
