     Squash Casserole

Ingredients
2 pounds yellow squash, sliced
2 eggs, beaten
1 cup mayonnaise
1 cup (8-ounces) grated cheddar cheese
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup soft bread crumbs
1 tablespoon margarine, melted
 

Instructions
Cook squash 10-15 minutes, until tender. Drain and cool slightly. To beaten eggs, add mayonnaise, cheese, onion, salt and pepper. Stir to blend. Gently stir in squash.
Pour into buttered 1 1/2 quart baking dish. Combine bread crumbs and margarine and sprinkle on top. Bake at 350 degrees for 30 minutes.
