     Stuffed Manicotti

Ingredients
2 tbsp (30 ml). Extra Virgin Olive Oil
1 Onion, Diced
4 Cloves Garlic
1 lb (.5 kg). Ground Turkey
1 Can Crushed Tomatoes
1/4 cup (60 ml) Red Wine
1 tsp (5 ml). Granulated Sugar
2 tbsp (30 ml). Fresh Italian Herbs
1 tbsp (15 ml). Fresh Basil
 
2 tsp (10 ml). Fresh Ground Black Pepper
1 tbsp (15 ml). Fresh Parsley
1 15 oz (420 grm). Part-skim Ricotta Cheese
1/4 cup (60 ml) Mozzarella Cheese
1/4 cup (60 ml) Romano or Similar Italian Cheese
2 Eggs
1 Package Manicotti Noodles

Instructions
• Pre-heat oven to 350. • Bring 6 cups (1425 ml) of water to a boil in medium pot. Add pinch of salt.
Meat sauce- • Heat oil in a medium sized sauce pan over medium-high heat. • Add onion and garlic to pan and saute 4-6 mins or until onions are soft. • Add ground turkey, cook until white, removing the excess grease from pan. • Add crushed tomatoes, wine, sugar, 1 tsp (5 ml). black pepper, 1 tbsp (15 ml). fresh Italian herbs, 1 tbsp (15 ml) fresh basil. • Heat for 10 mins then reduce temperature to low-medium.
Stuffing- • Blend all 3 cheeses in medium sized bowl. • Add 2 eggs, parsley, and 1 tsp (5 ml). black pepper continue to blend.
• Add noodles to pot for 5-7 mins each. • Remove the noodles and stuff with cheese blend. • Spray 9x13 baking pan. • Ladle of half of the meat sauce covering the bottom of pan. • Arrange stuffed noodles in baking pan and cover with remaining sauce. • Bake for 30-35 mins
