     Double Chocolate Pound Cake

Ingredients
1/2 Cup Applesauce, unsweetened
2 Tbl Vegetable Shortening
1 Cup Sugar
1/4 tsp Salt
2 Cups Chocolate Chips
1 tsp Vanilla
1/3 Cup Unsweetened COCOA
1/4 Cup Water
1 1/2 Cup White or Brown Rice Flour
 
1/3 Cup Tapioca Flour
1/2 tsp Baking Soda

Instructions
Preheat oven to 325. Grease a loaf pan or Bundt panIn a large saucepan, combine applesauce, oil, sugar, salt, 1 cup of the chocolate chips, vanilla, cocoa & water. Cook over low heat, stirring constantly, until chocolate chips are melted. Remove from heat. Add flours & baking soda, mix well with a WOODEN SPOON until smooth. Quickly stir in remaining chocolate chips and pour into a dgreased 9 x 5 x 3 loaf pan or BUNDT pan. Bake 1 hour and 35 minutes. Cool 15 minutes and loosen edges with a knife. Dust with powdered sugar.
