     Christmas Eve Potato Soup

Ingredients
2 1/2 cups of boiling water
2 cubes chicken bouillon
3/4 teaspoon salt
1 clove diced garlic or 1/8 teaspoon garlic powder
1 small chopped onion
3 cups diced raw potatoes
2 cups milk (whole or canned and water)
2 Tablespoons of margarine
1/4 teaspoon pepper
 

Instructions
Chop onion and add to boiling seasoned water. Peel and dice potatoes and add them. Cook over medium heat for 50 minutes, stirring occasionally. Scald the milk, add margarine and pepper. Add this mixture to cooked potatoes. Use a potato masher or egg beater to smooth out some lumps but not all.
Variation- Curry can be added for a curried soup. Serve bowls of cubed Velveeta cheese for melting and cubed cheddar cheese for cheese lumps, chopped ham, bacon crumbles, chives.
