     Passover Mandel Brot

Ingredients
eggs
3/4 c sugar
3/4 c oil
2 T brandy (used whiskey)
1 c plus 2 T matzah cake meal
3 T potato starch
1/2 t nutmeg (used cinnamon)
 

Instructions
Process eggs one minute, add sugar gradually. Add oil and mix then brandy. Add cake meal and potato starch til blended. Add chopped walnuts. Chill a few hours. Place on foiled pan sprinkled with matzah meal in logs 2 inches across. Bake 375 30 min til golden brown. While warm cut into diagonal slices and sprinkle with cinnamon/sugar mixture. Toast 7-8 min or leave in overnite. (turn off oven) Can add anise flavor and anise seed.
