     Peanut No-Butter Chocolate Chip Cookies

Ingredients
1 cup peanut butter (or any other nut butter)
1/2 sugar
1/2 cup maple sugar (or brown sugar)
1 tsp baking soda
2 eggs
1 tsp vanilla paste
1/2 cup flour
1/2 cup chocolate chips
1/2 cup 70 percent dark chocolate, cut into chunks
 

Instructions
Preheat oven to 325. In the bowl of an electric mixer fitted with the paddle attachment, combine the peanut butter, sugars, and baking soda until well mixed. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Add the vanilla paste. Add in the flour, mixing until well-combined. Stir in the chocolate chips and chunks. Line a cookie sheet with parchment paper. Using a cookie scoop or your hands roll the dough into 1 1/4-inch balls, slightly flattening each one, and place onto the cookie sheet. Bake the cookies for 10 minutes, or until the cookies are slightly puffy and light brown around the edges. Allow to cool on a wire rack.
