     Fabada (Chorizo & White Bean Soup)

Ingredients
1, 15 ounce can of White Beans
1 medium Chorizo (about 3 or 4 ounces)
2 ounces of Ham (like ham steak or cooking ham)
1/2 cup of chopped Yellow Onion
1 Garlic clove, thinly sliced
1 1/2 cups of Vegetable Stock (or chicken stock)
A pinch of Paprika
A pinch of Cayenne Pepper (optional)
Salt and Pepper
 

Instructions
-In a small pot, cook the chorizo, ham, onion and garlic together over medium heat until the onion is translucent (about 5 minutes). -Add 1/4 cup of the stock, boil for 2 minutes. Add the beans, paprika and cayenne pepper. Add the rest of the stock. -Cook covered over medium heat for 5 minutes. Taste and season with salt and pepper as necessary. Serve warm. It tastes better the next day!
