Mix the dry ingredients in a small bowl until well
combined and then set aside. In a separate bowl,
lightly beat the two eggs and then add the milk and
butter and stir until combined.

Then add the dry ingredients and combine until large
lumps are gone. It is fine for the mixture to have
small, pea sized lumps. The main thing is to be sure
not to over stir the ingredients, otherwise the
mixture might get “gummy”.

Once the wet and dry ingredients are combined, add
the corn kernels and stir until just combined.add
oil in a fry pan to deep fry or add a few
tablespoons of oil to a cast iron skillet to
lightly cook and brown the fritters. Heat the oil
until a drop of water dripped into the oil forms a
soft ball. Do not let the oil heat to the point
of smoking.

Drop spoonfuls of batter into the oil and cook for
3-5 minutes or until golden brown. Remove with a
slotted spoon and let drain on paper towels or
brown grocery bags. Serve hot.
