     Nutty Pimiento Cheese Balls

Ingredients
2 oz. cream cheese, softened
2 cups grated sharp cheddar cheese (8 oz.)
2 cups grated Monterey Jack cheese (8 oz.)
3 Tbs. mayonnaise
3 Tbs. chopped pimientos
1 tsp. grated onion
1/8 tsp. garlic powder
pinch of salt
pinch of freshly ground black pepper
 
1 1/2 cups chopped toasted pecans

Instructions
Process the cream cheese in the bowl of a food processor until smooth. Add the cheddar cheese, Monterey Jack, mayonnaise, pimiento, onion, garlic powder, salt and pepper and pulse to combine. Scrape the cheese mixture into a bowl, cover and refrigerate for 30 min. or up to 2 days.
Place the pecans in a small bowl. Roll the cheese mixture into 1 inch balls and coat them evenly in pecans.
Serve cheese balls immediately or cover with plastic wrap and chill until ready to serve.
Serving Suggestions
These cheese balls go great served with seasoned gourmet crackers
