     Potato Carrot Breakfast Bake

Ingredients
2 tblsp butter
1/2 cup chopped shallots
2 cups frozen or refrigerated hash browns
1 cup julienne cut carrots
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp fresh thyme leaves, chopped
4 large eggs
3/4 cup half and half
 
1 1/2 cups grated white cheddar, divided
1/4 cup parmesan cheese

Instructions
Preheat oven to 350 degrees. Butter a Woven Traditions Small Roundabout Casserole. Melt the butter in a skillet over medium heat; add scallions and saute for 2-3 minutes. Add potatoes and continue to saute 5-7 minutes or until the potatoes begin to brown. Add carrots adn saute 2-3 minutes until carrots are tender. Add salt, pepper and thyme and stir to distribute seasonings. Remove from heat and cool slightly. In a large mixing bowl, whisk together eggs and half and half. Stire in 1 1/4 cups shredded cheddar cheese and parmesan cheese. Cover top with a piece of foil. Place on middle rack in oven and bake covered about 1 hour or until soft set n the middle. Remove cover and turn oven to broil setting. Broil the top until golden brown. Carefully remove dish from oven. Allow this to rest 15 minutes before serving (note- this dish must rest otherwise it will be runny in the center). This recipe can be prepared in an 8x8 square baking dish.
The baking time will be 30-35 minutes or until soft set in the middle. Follow broiling directions. Allow it to rest 10 minutes before serving.
