     Southwestern Tomato Pasta

Ingredients
3 small ripe tomatoes
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 jalapeno seeded and finely chopped
3 tablespoons fresh cilantro
1 tablespoons fresh lime juice
1/2 teaspoon chili powder
1/4teaspoon salt
1/4 teaspoon ground white pepper
 
4 ounces angel hair pasta (uncooked)
4 ounces feta (we always use more)
2 tablespoons pine nuts, toasted

Instructions
Chop tomatoes coarsely over a non reactive bowl, reserving juice. Combine tomatoes, reserved juice, and next 8 ingredients in the same bowl. Cover and let stand at room temperature one hour (at least).Cook pasta according to package directions, drain.Serve tomato mixture over pasta. Top with feta and pine nuts.
