     Mini Potato Chip Frittatas

Ingredients
10 large eggs
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 tsp. sweet paprika
1 1/2 cups lightly crushed potato chips
1/4 lb. thinly sliced deli ham, diced
2 Tbs. finely chopped scallions
 

Instructions
Preheat the oven to 325 degrees. Spray a 12-cup muffin pan lightly with nonstick cooking spray.
In a large bowl, whisk together the eggs,salt,pepper and paprika. Sir in the crushed potato chips, ham, and scallions.
Divide the mixture among the muffin cups, filling each 3/4 of the way full.
Bake until the frittatas care cooked through, 12-15 min. Run a knife around the edges to loosen them. Pop out the fittatas and serve.
